
Indian Recipe
Sweet
You
need a sweet to complete the perfect Indian meal. Here are a few Indian
Recipe sweet treats to tantalize the taste buds. These Indian sweets
are popular throughout India, not just in the South. Kulfi is a
refreshing ice cream like Indian recipe sweet. I am giving the basic
recipe as well as some variation.
Kulfi
Ingredients:
6 cups Milk
3 tablespoons sugar
10 green cardamom pods (seeds removed and ground)
15 almonds, sliced and blanched (or 2 tbsp sliced pistachio nuts)
Put the milk in
a heavy saucepan and bring to a boil, stirring constantly. Reduce the
heat and simmer until it is reduced by a little more than half,
stirring occasionally, making sure it does not burn or stick to the
pan.
Stir in the
sugar and cardamom and leave until it cools. Pour the cooled mixture
into molds (traditional Kulfi molds are conical in shape but you can
also use muffin forms) and freeze for at least 6 hours, or overnight.
Before serving,
let the molds cool for about 10 minutes or enough to let the kulfi
slide out of the molds and roll in the nuts. Serve on a small plate
whole or sliced up. Enjoy!
You should be
able to find the ingredients at the local specialty store. I have
sometimes found that saffron is less expensive at the specialty Indian
store than the larger stores! Or if you prefer shop
online for ingredients for Indian recipe sweets.
Variation:
Make just like the above recipe but gently stir in a 1/2 teaspoon
crushed Saffron threads and 3/4 cup Heavy cream.
